Update apps/demo/server to use x402 v2 flows (headers + networks) while preserving zkx402 proof-aware pricing and gating.
Acceptance criteria
/motivate and /motivate-gated work using v2 headers- Quote-mode still returns 402 negotiation correctly
- Paid-mode still returns 403 for failed required claims
- CI preview + browser E2E pass
