fix(deps): resolve brace-expansion and minimatch alerts - #1320

Dependabot alerts 152-154 (brace-expansion quadratic-time expansion) and 164 (minimatch globparts amplification) are open. All are transitive dev dependencies pulled in by embroider, eslint and broccoli tooling, so they can only be fixed through pnpm overrides. brace-expansion is raised to the patched 1.1.21, 2.1.7 and 5.0.12 lines. minimatch 7.x-10.x is forced to ^11.0.1, a major bump for consumers that asked for 8, 9 or 10; build, lint, publint and the test suite pass. minimatch 3.x is not affected and is left alone. After the overrides the 2.x brace-expansion copy is no longer in the lockfile. Co-Authored-By: Claude Sonnet 5.5 <noreply@anthropic.com>
