Bumps the E2E test matrix to React Native 0.88.0 (from 0.87.1) in .github/workflows/e2e-v2.yml — rn-version in all matrix blocks (build matrix, iOS Xcode-26 include, and the test matrix).

The E2E test apps are generated fresh from the matrix rn-version, so no other files need to change (same approach as #6616). Node 22 is already used for non-0.71 legs, and RN 0.88 keeps the same engines range as 0.87 (^22.13.0 || ^24.3.0 || >= 26.0.0).

Intentionally not changed:

• spm-application.yml RN_VERSION stays at 0.87.1 — it pins the first RN version with SwiftPM integration, not the latest.
• dev-packages/e2e-tests react-native dev dependency — bumped with the deps update, as in chore(deps): update React Native to v0.87.1 #6607.

💡 Motivation and Context

React Native 0.88.0 has been released. This bumps the E2E tests to verify the SDK works correctly with the new version.

Relates to #6893.
