Skupper CLI installation instructions for V2 is installing V1

We need to either release a dev-preview version of v2 then adjust the installation to use
the corresponding version, like: curl https://skupper.io/install.sh | sh -s -- --version 2.0.0-preview-1
or recommend building the CLI from sources using make build-cmd.
